After a long drive with no real problems i looked in the engine bay and found a spring hanging down from here between the carbs... Where does the other end connect to?

Sorry for the vaguely circled area, i took the picture this morning before coming to work and didn't get a picture of the spring itself.
Is it something to do with the idle?

Thanks for everyones help so far, really appreciated. :D

the choke linkage.

It may be an owner added mod to help the choke come off fully as the return spring sometimes gets lazy and lets the jet stay down a bit.

I think all dolly SU's have a coil type return spring on the choke but some early carbs (pre waxstat) have these pull off springs on the throttle side. They were changed to the coil type on later carbs to avoid spindle bush wear.
