Serious overkill IMO!
Find a pic of a stock MkI/II GT6 bonnet, the top louvres are just about perfect, in both size and relative position! Ignore the side ones on the MkII, pretty as they are, the Dollies solid flitches would make them purely ornamental and you look a bit silly!
Something like this Stag is just about PERFICK!

Bit confused here
Dolomites have louvers already at the back of the bonnet,or are they just for show ? Could you drill a couple of holes in the top of the bulk head,for the heat to come out the louvers in the bonnet

May also be for the eyeball vents.

Hope I'm not too far off subject but I have thought of putting sound proofing on my bonnet but will this increase the temperature of the engine bay?

Besides accelerating the rust issues as per Mahesh's post, the vents in the Dolomite bonnet supply fresh air to all parts of the heater assembly. It's not a good idea to make an air path between the engine bay and the heater as it will permit fumes/smoke into the cabin. It might make a slight difference, but I doubt it would be noticeable. Wretched things get too hot anyway, a bit hotter than too hot is still much too hot!
