Hi Stu, two thoughts:
Faced with a similar problem I once added a blue dye to the coolant. That left a trace mark where the water was leaking and evapourating before I could otherwise spot it. Turned out is was coming out up the thread of one of the bolts holding on the cylinder head backplate. Even then I needed a mirror to be able to see it. I've had a similar problem with one of the bolts holding on the thermostat cover.
I run the race car with a pressure gauge fitted in the coolant system. I've had issues (see other thread) with the head gasket leaking between front cylinder and water jacket. Blows half a litre of coolant out of the overflow when driving, engine then seems to settle down for a bit and of course when I stopped there were no tell tale signs of where the water went. Reading the pressure is a more accurate way of determining overheating (and boiling) than the temperature gauge, especially if you are losing water and the temperature sender left reading the air temperature inside the cooling system.
