Spotted this on a Sprint at Donington at the weekend....does this mean the brakes are not servo assisted and there's a cylinder for the front and rear brakes?

looks like a yes to both.
Good way of getting the brake balance you want effectively. And the servo is only there to assist your leg muscles, makes no difference to how effective the brakes are. So loosing the servo looses weight and takes one more possible failure point out of the car. Important in a racer.

i had the same the same thought with my track car.
that the servo is a known failure point and i didn't want to trust my life on it haha.
also, if we did something similiar to the one in the original post it would have fouled on my Dellorto's

im not going to tell you what it is....
we started with some CAD/CAE (cardboard aided design/engineering)
then this....
....with bits cut out...
a few bends...
...welded....
oh dear, a HOLE!
can you tell what it is yet? (sorry about the 'joke')
hole drilled in brake pedal and bush thingy inserted
pedal reinforced
assembled. you should be able to guess what it is by now.....
tadaaa!
and there we have it, a dolomite with an inbuilt bias pedal box......what do you think?

Great work! As it appears to be missing in your penultimate photo, you won't forget to refit the nut on the pivot bolt, will you?
