Based on a VERY small statistical universe, early cars have 2 piece heel board carpets and post 75 cars just a single piece.
The only early OE carpet i've pulled out, was from the 72 1500 fwd, that was in 2 pieces. And a Coverdale set I fitted to a late car was an early model set that had been bought in error. That had a 2 piece heelboard carpet.
I pulled OE carpets from my 78 Sprint and a 78 1850, both had 1 piece heelboard carpets.

For myself, I try to find good condition used sets of carpets A) because they fit best and B) because i'm too cheap to buy new ones.
But it's hard to salvage the glued on heelboard and sill carpets intact, so I buy just those bits new from Cliff who prefers to make the heel board in 2 pieces for economic reasons. I reckon it's easier to fit in 2 bits too and the difference isn't really visible if you do it right!
