I'm still not 100% on what to tackle here even following some good advice.
Looking at the wires on the left hand side of my fuse box I have -
2 battery fed
1 altenator fed
1 from the coil
So, it feels like I can go to a max of 4 fuses if I run all of these on different fuses?

you can have more fuses by eitehr jumping wires or adding extra wires to the exsisting.

You mean 2 battery fed and one ignition switch fed. The coil feed is from the ignition fed wire and is unfused....ergo you dont want a fuse to blow
and turn your ignition off...

I see on the likes of ebay you can pick up universal fuse boxes that contain 8 fuses or more. Nice and simple to install too.
I think i would use one of these to replace the existing smaller box. Then use the 4 spare fuses and add in new wiring from the battery or ignition to them( depending on what you decide to use them for). To these you can add any of your planned accesories, ie stereo etc. Maybe at the same time replace and upgrade some of the existing fuse box wiring?
