on a few cars Ive seen for sale the bonnet doesnt sit flush with the front panel . Often one side is higher than the other, so is it that the front panel is offset slightly or the bonnet bent as the hinges dont seem to be adjustable in that direction.

Basically the car was cobbled together with little thought to precision. The car somewhat pre-dates the use of robots which ensure precision every time.
That said a lot of cars have had frontal damage or 'restoration' at the front end which if you don't get it lined up correctly will also cause a similar effect.

The hinges can be bent to make them sit flush.
Alternatively you can add a packing piece under the hinge to raise them a tad.

As Mark says, so many repairs are effected without thinking to test align the bonnet! Add to that the poor fit of aftermarket front panels.

Yes I thought packing will help one side if needed, but if too high it'll take more effort. Also as mentioned my thoughts were leaning towards being thrown together lol

Got that exact problem last night fitting the bonnet to my sprint for the first time in 5years,
One side sitting pretty high , only way I can see to put it right is bend the hinge.
