I'm old fashioned, I'd much rather sellers named a price, for that reason "I'm out".

But you might miss out on your ideal car.
Why not buy from an auction. The seller may have a reserve which is no different from a selling price and you know what you are willing to pay so it's also like you walking past a garage because the car is too expensive, so then you stop bidding.
Lots of nice cars have sold recently including very low mileage mint examples at auction.
