Hiya mate, another new Toledo owner here too, the front brake conversion is also something I am looking into, there's a chap on here called TrackerJack who sells a kit, you'll need to source the gear he suggests, I think its VW or Sierra parts but its a common enough mod that I will be doing when I have the readies. You could probably google TrackerJack and get his contact details, he seems like a good dude.
Stainless exhaust I'm not sure about, I would also be interested in a manifold, for that and the Service parts, your best bet is to try Rimmer Bros or the like, they stock a lot of parts though it isn't cheap.

For a conversion, you are looking at a secondhand setup. I will have one available soon, all from my old Toledo.
Stainless exhaust, the club can supply.
For parts, the club can supply some parts, but depending on what distributer you have, spitfire/herald stuff will be the same. I would not change the condenser if the existing one is good. Many new ones are rather poor. Caps/leads/rotor arms that are old tend to just keep going.
Oil filters tricky, most are "classic gold" or similar, no proper branded ones available.
4 branch manifold? don't bother unless the engine is suitably modified, with head/cams etc. Better making sure the engine is well tuned, that will add far more power and economy.
