Is there a way of adjusting this, or is it something that has to be done by a specialist? Mine is punching out 13v, but I would prefer the output to be just over 14v as per the manual.
Any ideas?

Theres no method of adjustment.
It could be a faulty alternator, it could also be a bad connection somewhere causing a high resistance or even a faulty battery.
Check all the earth straps are clean and tight.
Check the battery connections are clean and tight.
Check the plug at the back of the alternator and where the loom joins at the starter.
Get your battery tested - most motor factors will do this free...
If all this checks out and the voltage is still only 13v then replace the alternator.

Probably need a new voltage regulator Reg. Easy fix and parts readily available.

I had the alternator checked out by these nice people.. http://burghfieldstarterandalternatorcentre.co.uk/. Albeit, some time ago..they said it was fine.
However, when all the lights are on and with the brake pressed too, the needle plummets on the gauge and the engine starts to struggle..
I will go through the list of suspects..
