Am I right in thinking that the thread in the inlet manifold for the temp sender is 5/8 UNF with a flat sealing face?

Exactly that, with a copper washer.
I've changed mine to one with a warning switch connector that I'm planning on wiring up to a switchable buzzer. This one will show as running a bit hotter than the standard Smiths one as the resistance is more in keeping with modern gauges (VDO). Though that's easily adjustable with a resistor to earth, or moving the adjustment slot on the gauge itself.
